Vegetable Minestrone Soup

ingredients

  • 2 Tablespoons olive oil
  • 2 cloves garlic, chopped
  • 1 large onion, diced
  • 2 cups diced potatoes
  • 1 cup diced celery
  • 1 cup sliced zucchini
  • 1 cup cut green beans
  • 2 cups shredded cabbage
  • 4 cups beef broth
  • 2 cups water
  • 2 cups peeled tomatoes
  • 1 can (16 oz.) cannellini beans
  • 1/2 lb small shell pasta
  • chopped parsley and basil, optional
  • salt and pepper, optional

steps

  1. Saute garlic and onion. Add potatoes and celery, cook for 5 minutes
  2. Add broth and 2 cups water, bring to a boil. Add tomatoes and simmer for 10 minutes
  3. Add zucchini, beans, and cabbage. Bring to a boil. Add parsley, basil, and beans. Simmer 10 minutes
  4. Stir in pasta and cook 8 to 10 minutes. Season with salt and pepper to taste.
  5. Let stand 5 minutes before serving. Garnish with grated cheese.
