ingredients

  • 1/2 cup apricot preserves
  • 1 Tablespoon butter
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon grated nutmeg
  • 3 firm nectarines, pitted and quartered
  • 3 firm plums, pitted and quartered
  • 3 firm peaches, pitted and quartered
  • 1 nonfat pound cake, cut into cubes
  • 6 metal or wooden skewers*

steps

  1. For the glaze, in a small saucepan over medium heat combine preserves, butter, cinnamon, nutmeg and 1 tablespoon water; cook and stir just until butter melts. Set aside.
  2. Preheat grill to medium (300°F–350°F). Thread fruit and cake alternately on 12-inch skewers. Brush with glaze.
  3. Place skewers on grill 5 inches from heat. Grill 7 minutes, turning once. Brush with glaze. Serve skewers with remaining glaze.

*If using wooden skewers, soak at least 30 minutes before grilling to prevent burning.
